Maybe not for every meal, but you can’t deny the mouth-watering smell of an oak grilled New York strip or the succulent tenderness of a perfectly cooked filet mignon. Even if you’re not a big steak fan, surely you can at least appreciate the time and effort that goes into a nice cut of meat. Typically, you can tell by looking closely at the cut of meat whether it’s good or not. There is a line of fat called the marbling that runs down through the middle of the muscle. And the better the meat, the more marbling you see on the beef. And if you find yourself with a cut that’s about 3cm to 4cm thick, you’re looking at an ideal piece of meat for the grill, or pan. But usually, restaurants will serve everything from sirloins to filets and toss them on the grill to reach the perfect temperature. </p>
<p> So, if you’re heading out on the town for a great steak you need to know for sure how you want your steak cooked. Remember to always ask the server what their temperatures are like because, steaks often differ in size and thickness, just as grills vary in temperature. But usually, they stay within the same scale: </p>
<ul>
<li> <strong> Black and Blue (or Pittsburg style)</strong>— internal temperature will barely reach 100 degrees. The outside of the meat is seared black while the inside remains cold. This way is often      unusual, but there are those who enjoy the raw flavor within the meat. </li>
<li> <strong>Rare</strong>— internal temperature will be between 100 and 120 degrees. The outside of a rare steak should be hot with a red, cool to warm, center. </li>
<li> <strong>Medium Rare</strong>— internal temperature will be about 126 degrees. The middle should still be red, but warm and firm. This is one of the more commonly requested temperatures. </li>
<li> <strong>Medium</strong>— internal temperature reaches anywhere from 135 to 140 degrees. The medium steak is hot brown on the outside and hot pink in the middle. </li>
<li> <strong>Medium Well</strong>— internal temperature is around 145 degrees. All the color is practically gone at this point and the steak is deep brown on the outside. </li>
<li> <strong>Well Done</strong>— internal temperature is well over 155 degrees. The pink color is thoroughly gone and the steak is completely brown in the center with a dark brown outside. </li>

<p> So once you’ve decided what the perfect temperature for your steak will be, then it’s time to test it out! No matter where you are, it’s almost certain that there is a local steak house around that sets the bar for the best steak in town. Or you could even visit the tried and true chain restaurants such as Outback, Applebee’s, or Chili’s that are sure to be only a few blocks away at the most. And who wouldn’t want to try their luck to possibly score some free food and get a steak dinner on the house?
